“There’s a well-known cheese on the market that this recipe is inspired by – in fact, I think this one’s better. Whipped soft goat’s and cream cheese, combined with a good amount of raw garlic and lots of chopped green herbs make this a remarkably good combination for some crunchy radishes and plenty of crackers.”
Serves 4
Ingredients:
125g soft cream cheese
250g soft goat’s cheese
1 large clove of garlic, peeled and finely crushed
1 bunch flat leaf or parsley, leaves very finely chopped
½ bunch of tarragon, chervil or marjoram, any soft green spring/summer herb, leaves finely chopped
Big pinch of salt and plenty of freshly ground black pepper, to taste
Big bunch of radishes, washed
Method:
In a bowl mix together the cheeses, garlic, herbs, salt, and pepper. Beat vigorously to combine.
Serve the whipped cheese with the radishes and Peter’s Yard Poppy Seed Sourdough Crackers.
