Over the last few months we’ve been graced with an abundance of warmer weather, which has encouraged us here at Peter’s Yard to make the most of time spent outdoors – we’ve also been enjoying experimenting with lighter dishes for those balmier days, utlising the local seasonal produce we’re lucky to have here in the U.K.
This week, as part of our competition with Isle of Wight Tomatoes, we’re sharing one of their popular summer recipes – Roasted Tomato and Smoked Mackerel Salad. The sweet bursts of flavour from their vine-ripened tomatoes, combined with the peppery mackerel and zingy crème fraiche dressing is the perfect antidote to a hot summers’ day.
Delicious served on its own, or for topping on our Original sourdough crispbread – just adjust your portion size to taste.

Ingredients
- 300g Isle of Wight Cocktail Vine Tomatoes halved
- 2 Peppered Mackerel Fillets
- 2 tbsp chopped sun-dried tomatoes
- Olive oil
- Chilli flakes
- 1 tbsp mayonnaise
- 2 tbsp crème fraiche
- Half a lemon
- Salt & pepper
Method
Season the halved cocktail vine tomatoes with salt, pepper, a few chilli flakes and a drizzle of olive oil.
Roast the halved vine tomatoes for 20 minutes at 190c then allow to cool.
Make a dressing with the chopped sun-dried tomatoes, mayonnaise, crème fraiche, a squeeze of lemon and salt & pepper.
Top a bowl of salad leaves with the flaked, peppered mackerel, the remaining roast tomatoes and the dressing and enjoy!
